What about Matthew Murdock. He has his own martial art form which is a fusion of boxing, ninjutsu, judo and aiki-jujitsu.

I had forgotten about Stick. He would indeed be a good choice.
I haven't seen him around in a while. Is he still alive?
Stick has been reincarnated as Baby Karen. So...in a sense...

Stick trained Matt. But perhaps the students has surpassed the master.
But I wouldn't say that Matt is a better combatant than Iron Fist or Shang-Chi though he may be on that level.

Hmmm....
Marc Spector (Moon Knight) knows how to instantly knock someone out via nerve points. Fought Frank Castle (Punisher) to a stand still...
Ah. here we go:

Navarre is right that Matt is a better combatant than Iron Fist or Shang-Chi though he may be on that stage.

Bigger is better.
The best hand to hand combatant would, obviously, be the guy with the biggest hands.
Galactus is your winner

You aren't going to tell me how Wolverine would slip inside of Galactus's reach and use his superior close-quarters training to take the big man out?

Everyone already knows that. No reason to state the obvious
